Garlic Bread with Garlic Butter


This garlic bread is absolutely amazing, so amazing it was devoured in no time leaving no leftovers. Usually I make my garlic bread by spreading butter and sprinkling cheese and garlic, but now I think I will be making it this way for now on. It is made using garlic butter. Once in a while I will make this butter and all we would do is spread some on our warm dinner rolls. Well last night I decided that I should spread some on a roll of French bread sliced in half and broiled in the oven. I am glad I did because it came out amazing. Now I originally got this recipe from Allrecipes but I changed it around. Well I hope you get a chance to try this garlic bread or at least try the butter on something else.

Garlic Bread with Garlic Butter

1 cup butter, softened
3-4 cloves of garlic, minced
1/4 cup grated Parmesan cheese
1 tablespoon garlic salt
1 teaspoon Herb de Provence seasoning
1/2 teaspoon ground black pepper
1/2 teaspoon Spanish Hot paprika

Directions

In a small bowl, combine softened butter, minced garlic and parmesan cheese. Season with garlic salt, Italian seasoning, pepper and paprika. Mix until smooth. Spread the butter all over the French bread. Place on a baking sheet and place under broiler until the bread begins to turn a nice golden brown. Slice and enjoy. :)

Banana Nut Bread



So I have a legitimate reason for not blogging this past week. That reason being that I had to go away for work again. I was sent to Irvine this time for some training. I had a lot of fun and learned a lot of useful things, but it is good to be back home with Tomas because I missed him a lot. Well the recipe I am going to share with you today is a banana nut bread that I made with my mom not too long ago. We were looking through the Food Network Magazine and found the banana nut bread recipe and decided to give it a try. It came out very yummy and I hope you like it too. Enjoy :)


Banana Nut Bread


1 banana, mashed

1 cup chocolate chips

3/4 cup walnuts

1 1/4 cup flour

3/4 cup sugar

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

2 eggs

1/2 cup melted and cooled butter

1/2 cup sour cream

1 teaspoon vanilla extract



Preheat the oven to 350*F. Lightly grease 1 loaf pan. Mix the flour, sugar, baking powder, salt, baking soda, cinnamon, and nutmeg in a large bowl. Add in the walnuts and chocolate chips. In a medium bowl whisk the eggs, butter, sour cream, and vanilla. Stir in the banana into the egg mixture, then fold in the dry mixture until well combined. Spread the batter into the prepared pan. Bake for about 55 minutes or until toothpick inserted in the center comes out clean. Cool for 30 minutes and then slice and enjoy :)

French Bread

I am so proud of myself because I made homemade bread. I was bored and though it would be fun if I made fresh bread. So I pulled out my Better Home and Garden Cookbook and found a recipe for French bread and got started. It was a long process but the end result turned out great. I will definitely make fresh bread again, when I have the time. So if you have the time then I would recommend making your own bread because it is a great accomplishment. :)
French Bread
5 1/2 – 6 cups all-purpose flour
2 packages of active dry yeast
1 ½ teaspoons salt
2 cups warm water
1 egg white, slightly beaten
1 tablespoon water

1. In a large mixing bowl stir together 2 cups of the flour, the yeast and the salt. Add the 2 cups warm water to the flour mixture. Beat with an electric mixer on low to medium speed for 30 seconds, scraping the bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.

2. Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make a stiff dough that is smooth and elastic (8-10 minutes) Shape dough into a ball. Place in a lightly greased bowl turning once to grease dough surface. Cover; let rise in a warm placeuntil double in size (about 1 hour).

3. Punch dough down. Turn dough out onto a lightly floured surface. Divide dough in half. Cover and let rest for 10 minutes. Meanwhile, lightly grease a baking sheet.

4. Roll each dough half into a 15x10 inch rectangle. Tightly roll up, starting from a long side; seal well. If desired, pinch and slightly pull ends to taper them. Place shaped dough, seam sides down, on prepared baking sheet. In a small bowl stir egg white and the 1 tablespoon water. Brush some of the egg white mixture over loaf tops. Let rise until nearly double in size (35-45 minutes).
5. Preheat the oven to 375ºF. Using a sharp knife, make three or four diagonal cuts about ¼ inch deep across each loaf top. Bake for 20 minutes. Brush again with some of the egg white mixture. Continue baking for 15-20 minutes more or until bread sounds hollow when lightly tapped. Immediately remove loaves from baking sheet. Cool on wire rack. Enjoy

Chocolate Chip Banana Bread


For some reason every time I buy bananas, they never get eaten fast enough. Every time I want bananas I buy a whole bunch of them thinking I will eat them all. Unfortunately they are not ripe enough for me when I first buy them, therefore I let them ripen on the counter for a few days until they are to my liking. But what always seems to happen is I never get around to eating them, so I always decide to turn them into banana bread. I got this recipe from my mom many years ago and it gets so many great reviews form our friends. My friend Jeni absolutely loves this banana bread, so when I make it I usually give her one of the loafs, which makes her very happy. Well I hope you enjoy this fabulous recipe. :)
Chocolate Chip Banana Bread
1 cup oil
2 cups sugar
4 eggs
6-7 bananas, mashed
2 ½ cups flour
1 teaspoon salt
2 teaspoons baking soda
1 cup chocolate chips

Preheat the oven to 350ºF. Grease 2 loaf pans and set aside. Cream the oil with the sugar. Add the eggs and beat well. Add the mashed bananas, stirring to blend. In a separate bowl, sift together the dry ingredients. Fold the dry ingredients into the batter, mixing well. Add the chocolate chips (you can add nuts instead of chocolate chips or you can add a little of both). Pour the batter into the prepared pans. Bake for 50-60 minutes or until toothpick comes out clean. Enjoy

Pizza Stuffed Pretzels

I was browsing around on Pillsbury.com today and I came across this recipe for pizza stuffed Pretzels. I got so excited because I love pretzels and pizza. Therefore I decided that I have to try these out. I did change a couple of things though due to the ingredients I had on hand plus I felt that the bread needed a little of more flavoring. Mine were a bit overstuffed compared to the others, therefore they did not photograph to well, but they sure were yummy. I will definitely will be making these again. I hope you enjoy these as much as I did :)

Pizza Stuffed Pretzels

1 tablespoon Olive oil
1 tablespoon cornmeal
1 tablespoon flour
1 can refrigerated pizza crust
28 pepperoni slices
About 1-2 cups shredded mozzarella cheese
1 tablespoon melted butter
4 tablespoons garlic powder
4 tablespoons parmesan cheese
4 tablespoons Italian seasoning

Heat the oven to 425º F. Brush a large cookie sheet with 1/2 tablespoon olive oil and sprinkle the sheet with cornmeal. Sprinkle flour over work spurface. Unroll pizza dough onto surfaceand press dough out into a rectangle that is 16x10 inches. With a pizza cutter cut the dough into 4 strips lengthwise that are 2 inches wide. Evenly place 7 pepperonis on each strip and sprinkle mozzarella cheese on strips. Bring up sides of each dough strip and press edegs together to seal the cheese and pepperoni inside. Gently roll into a rope and fold into a pretzel shape ( start by making a u-shape then cross the ends and fold over to make pretzel shape). Place pretzels on cookie sheet and brush the tops with the melted butter and sprinkle the tops with the Italian seasoning, garlic powder, and parmesan cheese. Place in the preheated oven and bake for 13-17 minutes or until golden brown. Serve with marinara sauce. Enjoy. :)

Stuffed Pizza Bites

What's for dinner tonight? That was the question I kept asking myself until I came across this recipe for these delicious pizza bites, which I found on the blog called Our Best Bites. These pizza bites were so good that they were gone in no time, not even a crumb was left behind. A good thing about this recipe is that it is very versatile, you can stuff it with any of your favorite pizza toppings. We chose pepperoni and cheese, but you can do whatever you like. Which ever way you decide to make these I hope you enjoy them as much as we did.
Stuffed Pizza Bites
1 can refrigerated pizza dough
Pepperoni (or toppings of your choice)
Shredded or cubed mozzarella cheese
1 tablespoon melted butter
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon parmesan cheese
Marinara sauce for dipping

Preheat the oven to 400ºF. Grease 9 in cake pan and set aside. Roll out pizza dough onto floured surface and cut into about 24 squares. Place cheese and toppings on each square. Carefully wrap dough over toppings and press to seal edges. Place sealed side down into the greased cake pan. Brush the tops with the melted butter and sprinkle the garlic powder, Italian seasoning and parmesan cheese on top. Place in oven and bake for about 15 minutes or until golden brown. Remove and let cool for a couple of minutes. Serve with marinara sauce for dipping. Enjoy

Buttery Parmesan Knots

I got this recipe from my mom’s blog, whom got it from someone else’s blog. These knots are absolutely delicious. They are so good everyone fights for the last one, therefore in my house I sometimes have to double the recipe. So I hope you love these as much as I do.

Buttery Parmesan Knots

1 can (12 oz) refrigerated flaky buttermilk biscuits (the large kind like Grand’s)
¼ cup butter
3 Tablespoons parmesan cheese
½ teaspoon garlic powder
1 teaspoon Herb de Provence or Italian Seasoning

Preheat oven to 350ºF. Roll each biscuit into 12 inch ropes and tie into a knot; tucking the ends underneath. Place on a greased baking sheet 2 inches apart. Bake for 10-12 minutes or until golden brown.

In a small bowl melt the butter in the microwave. When done add the parmesan cheese, garlic powder, and Herb de Provence to the melted butter. Brush the warm bread with the butter mixture and enjoy.
