Zebra Wedding Cake and Pink and Black Cupcakes

This is the zebra wedding cake that I made for my friends sister. This was going to sit on the top of the cake stand and underneath was going to be the 100 cupcakes, which is pictured below.

On the cupcakes are the sprinkles I spent a lot of time making.

I was asked to make some wedding cupcakes for a friend's sister and she requested that they would have big pink and black sprinkles on top. Well I had a hard time finding any around town or on the Internet, therefore I made them myself (which was not easy). What I did was I bought some pink and black fondant and rolled it out super thin. I then took a frosting tip and used the end of it to cut out circle shapes. I did this until there was no fondant left. After many long hours I finally had enough sprinkles for over 100 cupcakes.

Hidden Kiss Surprise Cookie

At my job everyone calls me the Betty Crocker of HomeGoods. So when anyone has questions about cooking, they come to me. Well over a few years ago my friend asked for a good chocolate chip cookie recipe that she could use in a competition that she was having in her high school economics class. After a lot of research I came across this recipe on the Hershey website. So she tried it out and won the competition because she made a chocolate chip cookie that was not like the typical kind of chocolate chip cookie. It has been a long time since I made these myself, but since I saw the Hershey kisses on sale, I decided that maybe its time that I make them again. So here is the recipe so you can enjoy this tasty treat.

Hidden Kiss Surprise Cookie

48 Hershey Kisses, unwrapped
1 cup butter, softened
1/3 cup granulated sugar
1/3 cup packed brown sugar
1 tsp vanilla
2 cups all-purpose flour
1 cup miniature semi-sweet chocolate chips

Chocolate Drizzle
¼ cup chocolate chips
1 tsp shortening

Preheat oven to 375º. Beat butter, granulated sugar, brown sugar, and vanilla in a bowl until well blended. Add the flour to the butter mixture and blend until smooth. Stir in the chocolate chips. Mold a scant amount of dough around each Hershey kiss covering it completely. Shape into round balls and place on an ungreased cookie sheet. Bake for 10-12 minutes or until set. Cool slightly and move to a cooling rack and cool completely. Prepare chocolate drizzle by melting the chocolate chips and the shortening together in a microwave safe dish 30 seconds at a time until completely smooth. Using a spoon drizzle chocolate over cookies and enjoy.

Key Lime Pie

For Valentine's Day I thought it would be nice if I made my boyfriend Tomas his favorite dessert, which is key lime pie. He absolutely loved it and was so surprised I made it because he thought I bought it. He also loved the heart shaped limes that I placed in the middle of the pie. Since he enjoyed the pie so much I would like to share this simple recipe so you can make this pie as well. I actually found this recipe in the Southern Living: Our Best-Ever Cakes and Pies magazine that I bought a long time ago. I did change a couple of things with this recipe. It is actually is suppose to have a meringue topping, but since none of us like meringue I decided to garnish it with whip cream and lime wedges. Also if you prefer to not make the pie crust then you can buy an already made graham cracker crust at the store.

Key Lime Pie
Pie Crust:
1 ¼ cups graham Cracker Crumbs
1/3 cup butter, melted
¼ cup firmly packed brown sugar.

2 (14oz) cans sweetened condensed milk
1 cup key lime juice

Preheat oven to 350º. Combine the pie crust ingredients and press the crust mixture on bottom and sides of a 9-inch pie plate. Bake 10 minutes. Let it cool completely. Preheat the oven to 325º. Stir together the sweetened condensed milk and key lime juice until blended. Pour into the prepared crust and bake for 22-25 minutes. Cool for 8 hours.

These are the flowers my boyfriend gave me on Valentine's day. He also gave me a Coach purse for Valentine's Day but he gave that to me a few weeks before. He is so sweet I love him so much.

Fried Nutella Wonton

A long time ago i was watching Giada de Laurentiis and i saw her make these. I thought they looked so delicious and easy to make. Because I saw it so long ago I am not quite sure how she makes them but this is how I do them. There is no specific amount that you have to make you can make a little bit or a lot, it is all up to you.

1 package of wonton wrappers, cut into squares
Bowl of water
Canola oil for frying
Powered sugar for decoration

First cut the wrappers into equal sized squares. Take two squares and in the middle of one spoon a little bit of Nutella in the middle, about a tablespoon. Next use a basting brush or your finger and go around the edges of the wrapper with some water, about a half inch wide. Place the other won ton wrapper square on top and press together to seal edges. If desired you can crinkle cut the edges to make it look like a ravioli, if you don't have the tool then you can leave it the way it is. Now place it in the hot oil, a couple at a time, turning after 15 seconds. Fry until golden brown and remove to a paper towel lined plate. Sprinkle with powered sugar and serve.

Mexican Tortilla Chicken Soup

I have been searching for a tasty chicken tortilla soup that has a kick for a while now. After a long search I finally found one that my boyfriend Tomas approves of. This recipe is Tyler Florence’s recipe, but I doubled it and changed a few other things for our liking.

2 Tbsp olive oil
6 cloves garlic, minced
4 jalapenos, seeded and minced
3 ripe tomatoes, chopped
1 Tbsp onion powder
2 quarts chicken stock
1 can black beans
2 ears of fresh grilled corn or 1 can of corn drained
Salt and pepper to taste
Canola oil for frying
2 flour tortillas cut into strips
Shredded cheese, optional
Sliced avocado optional

Place stockpot over medium heat and coat with the 2 Tbsp olive oil. Add garlic, jalapenos, tomatoes, and diced onion or onion powder. Cook for 15 minutes or until the vegetables are cooked down and pulpy. Pour in the stock and season with salt and pepper to taste. Simmer for 20 minutes.

While the soup is simmering, heat up some canola oil over medium heat. When the oil is ready add the tortilla strips a little at a time. Remove to paper towel lined plate and season with salt.
When soup is done dish out the soup into bowls and garnish with the chips, cheese or whatever your heart desires and enjoy

Chocolate Chip Pie

Over a few months ago I bought The Dean Bros Cookbook at a really good price. Unfortunately, i never got a chance to make anything from their book until now. The first one i decided to try was their Chocolate Chip Pie. It came out really good and everyone liked it. Another good thing about this recipe is it makes two pies which meant more to go around. One thing that i did different was i did not follow their whipped cream recipe because I wanted to make it easier for me to do and also because I was being lazy. So what I did was I used cool whip and mixed the chocolate chips in. You can do whatever you feel more comfortable with either way it still comes out good.

Chocolate Chip Pie

2 ¾ cups all-purpose flour
1 ½ teaspoons salt
1 ¼ teaspoons baking soda
1 teaspoon baking powder
1 cup butter
1 ½ cups packed light brown sugar
½ cup granulated sugar
3 large eggs
1 teaspoon vanilla
3 cups semisweet chocolate chips
2 cups chopped walnuts (optional)

Whipped Cream:
1 container of Cool Whip
½ cup chocolate chips

1) Preheat oven to 350ºF. Grease two 9-inch pie plates and set aside.
2) In a large bowl, sift the flour, salt, baking soda, and baking powder. In the bowl of an electric mixer, cream the butter, brown sugar, and granulated sugar. Add the eggs one at a time. Beat in the vanilla. Add the flour mixture a little at a time until fully combined. Fold in the 3 cups of chocolate chips and nuts if you want. Divide the dough between the two pie plates and smooth down.
3) Bake the pies for 30 minutes or until they are slightly firm to the touch but still soft. If the pies begin to darken before done then cover with foil and continue to bake. When done let pies cool completely.
4) For the whipped topping you can take a container of cool whip and mix in ½ cup miniature chocolate chips. When ready to serve pies spread the whipped topping over cooled pies and serve.

Muddy Buddies

Chex Mix Muddy Buddies are one of my favorite snacks. I have heard this delicious snack go by other names as well. I have heard them called Puppy Chow, Monkey Munch, and even Pigeon Poop. Whatever they may be called I cannot get enough. You can usually get the recipie on the back of the Chex cereal box or on their website. But to make it eaiser for you I will post the recipie on here as well.

Chex Mix Muddy Buddies
9 cups Chex cereal
1 cup Semi-sweet chocolate chips
1/2 cup peanut butter
1/4 cup butter
1 cup powered sugar
Measure out cereal and place in a big bowl; set aside. In a 1-quart microwave safe dish, microwave chocolate chips, peanut butter, and butter on high for 1 minute, stirring after 30 seconds. If needed, heat an additional 30 seconds until mixture is smooth. Pour mixture over cereal and stir until evenly coated. Transfer to a 2-gallon resealable bag and add powdered sugar. Shake until evenly coated. Enjoy

Judy's Band-Aid Cake

This is one of my recent cakes I have made. My friend Judy will be going into surgery soon to donate one of her kiddney's to her father. So for her last day of work me and some friends decided that it would be nice to make a cake for her. She really loved it and thought the band-aid was funny.
