Brownie Mallow Bars




So I have to admit that I have been a little lazy lately. When I get off work I usually come home and do nothing. Therefore my laziness has taken a toll on my creations as well as my blog. So I am going to try and get out of my lazy rut and get back to posting things on my blog again, especially since I do have a lot I can post about. So to get things started up again I made these really delicious brownies that I found in my Taste of Home Cookbook. They are so easy to make I don't know why I didn't think of it myself. Brownie Mallow Bars

1 package fudge brownie mix (13-inch x 9-inch pan size)
1 package (10-1/2 ounces) miniature marshmallows
2 cups (12 ounces) semisweet chocolate chips
1 cup peanut butter
1 tablespoon butter
1-1/2 cups crisp rice cereal


Prepare brownie batter according to package directions for fudge-like brownies. Pour into greased 13-in. x 9-in. baking pan. Bake at 350° for 28-30 minutes. Top with marshmallows; bake 3 minutes longer (marshmallows will not be completely melted). Cool on a wire rack.
In a microwave-safe bowl, melt the chocolate chips, peanut butter and butter; stir until smooth. Stir in cereal; spread over brownies. Refrigerate for 1-2 hours or until firm before cutting.

Brownie Ice Cream Cake

Happy Birthday To Me !!!!!! Yup, today was my birthday and I had a very great day. To celebrate Tomas and I went to the Fresno Chaffee Zoo and we had a blast. (I posted some of the pictures of the animals under the My Life section of my blog if you want to see them). Anyways for my birthday I wanted to make myself something special. I really did not want a cake, but I wanted something like a cake. Therefore I thought that instead of cake I will make brownies and turn it into an ice cream cake. It came out good, very rich, but very good. Since it was frozen it made it very difficult to cut, so I recommend defrosting it a bit before serving. Enjoy :)
Brownie Ice Cream Cake
2 brownie mixes (or prepare your favorite brownies)
Ice cream
Chocolate frosting
Prepare your brownies according to the package, but bake in two round greased cake pans. Bake 40 minutes or until toothpick inserted in the center comes out clean. Remove from the oven and let the brownies cool completely. When cool remove the ice cream from freezer and set on the counter to soften. once soft enough to handle, spread the ice cream on to one of the brownie layers. Place the second layer on top of the ice cream and then place the brownie layers back into the freezer to set. When set, remove fro the freezer and frost the cake. When ready to eat, defrost for a little while then cut and serve.

Coconut Stuffed Brownies

I love brownies and I really love coconut. I don't just love coconut, I am obsessed with it. My friend Katie and I always talk about how much we love coconut and anytime we find something good with coconut in it, we always share with each other what that something is. For instance at our job, HomeGoods, we sometimes get in these toasted coconut chips, and let me just say they are to die for. The only down side to these chips is that because they are so good they fly off the shelves in no time. Lucky for us I found them at Savemart, which I told Katie about right away, so now we can have those delicious coconut chips anytime we like. We did get even luckier when the came into our store a couple of weeks ago.
Well anyways let me get to the coconut stuffed brownies. The other day I was sitting at home pondering on different things I should make. Since I was really craving coconut and chocolate brownies, I knew I wanted to do something dealing with those two ingredients. So I got to thinking, why don't I make coconut stuffed brownies. I didn't know how they were going to turn out because I have never made them before, but I gave it a try and they came out tasting amazing. They would have probably come out tasting even better if I made the brownies from scratch, but I used a boxed brownie mix instead to make it easier on myself. When it came to the coconut filling I got the recipe from the chocolate macaroon cake that my mom and I make ( you can find the recipe for the cake on her blog. I have yet to make it for my blog, but I plan on making it real soon). So if you love coconut and brownies and think that the two combined sound amazing, then I highly suggest you make these things yourself real soon. :)
Coconut stuffed Brownies
1 boxed brownie mix ( and the ingredients listed on the package)
2 egg whites
Pinch of salt
1/3 cup white sugar
2 Tablespoons flour
1 3/4 cups shredded coconut
Preheat the oven and prepare the brownie mix according to package. In a mixing bowl, beat the egg whites and salt until foamy.Gradually add the sugar and continue beating until the mixture forms stiff peaks. Blend in flour and coconut. Pour half of the prepared brownie batter into a greased baking pan. Spread the coconut mixture on top of the brownie batter. Pour the remaining half of the brownie batter on top of the coconut mixture, making sure all the coconut mixture is covered. Bake according to the package directions or until a toothpick inserted in the center comes out clean. Serve and enjoy. :)

Brownie Bites With Heart Chocolate Centers


I know Valentine's Day was over a week ago, but I still wanted to share the treat that I made for my work. I was craving brownies so I wanted to make bite sized ones that involved no cutting. Now I was a little worried at first when I failed at making brownie bites a while back, but I didn't let it get to me and I attempted to make them again. Which they totally turned out great because this time I properly greased the mini muffin pan. Since it is no longer Valentine's you can put a different chocolate candy of your choice. Be creative and have fun when you make your own tasty brownie bites.
Brownie Bites With Heart Chocolate Centers
1 package of brownie mix (and ingredients listed on the back)
1 package of heart shaped chocolates, unwrapped
Festive sprinkles (optional)
Preheat the oven according to package directions. Mix the ingredients together according to package directions. Grease the mini muffin pan very well and fill with the brownie batter about half to three quarters way up. Bake for 15 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and instantly insert chocolates in the center. Once all the chocolates are inserted sprinkle the sprinkles on top and remove from pan using a spoon or fork. Cool and enjoy :)

German Chocolate Brownies


Today has to be one of the greatest national food holidays out there because today is national brownie day. So to celebrate I made my most famous brownies that everyone loves. Those brownies happen to be my German chocolate brownies. Unfortunately, I will not be able to eat any because I made them for my friend Mallory. Tomorrow is her last day at work, so I wanted to bid her farewell with some wonderful brownies. Since I am giving her this pan of brownies I don't have a picture to share of what they look like cut, but believe me they look and taste amazing. So I hope you get a chance to one day enjoy these brownies for yourself and I also hope you have a wonderful national brownie day. :)
German Chocolate Brownies
Brownies
3/4 cup all-purpose flour
1/4 teaspoon baking soda
3/4 cup sugar
1/3 cup butter
2 tablespoons water
1 cup semi-sweet chocolate chips
1 teaspoon vanilla extract
2 eggs
Topping
25 caramel squares
2 tablespoons butter
2 tablespoons milk
1 cup semi-sweet chocolate chips
1 cup chopped pecans
1/2 cup toasted coconut
Preheat the oven to 325*F. Grease a 9-inch square baking pan. In a small bowl, mix together the flour and baking soda and set aside. In a small sauce pan, combine the sugar, butter, and water. Bring to a boil over a medium heat; remove immediately from heat. Stir in the 1 cup chocolate chips and vanilla until chocolate is melted and the mixture is smooth. Transfer the mixture to a bowl. Cool complete,y. Stir in eggs, 1 at a time, beating well after each addition. Gradually stir in flour mixture until smooth. Pour into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
To make the topping toast the coconut under the broiler until it turns a golden brown. Mix the coconut, chocolate chips, and chopped pecans together and set aside. In a microwave safe bowl place add the caramels, butter, and milk. Microwave for 1-2 minutes, stirring every 30 seconds until melted. Pour the caramel mixture over the cooked brownies reserving a little caramel for drizzling on the top. Add the chocolate chip mixture to the top of the caramel and then drizzle the excess caramel on top. Let it cool and then enjoy. :)

Fluffernutter Brownies

I really wanted to make these fluffernutter brownies back on the 8th of this month because that was national fluffernutter day. Unfortunately, I was busy doing other things, therefore I wasn't able to make these brownies until now. For those of you that do not know what fluffernutter is it is actually a sandwich that is made with white bread that has a layer of peanut butter and marshmallow in between the two slices of bread. Though my brownies are not a sandwich, they still have the combination of peanut butter and marshmallow. Now when it comes to the brownie recipe, I got it off the bag of Reeses Peanut Butter Chips. Then I decided to take the marshmallow cream and mix it into the brownie batter. Well I hope you enjoy these tasty brownies.
Fluffernutter Brownies
1/2 cup (1 stick) butter, softened
1/4 cup peanut butter
1 cup sugar
1 cup brown sugar
3 eggs
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 package Reeses peanut butter chips
1 cup marshmallow cream
Preheat the oven to 350*F. Grease a 9x13 inch baking dish and set aside. Beat the butter and peanut butter together. Add sugar and brown sugar.;beat well. Add eggs, one at a time, beating well after each addition. Blend in vanilla. Stir together the flour, baking powder and salt; mix into the peanut butter mixture. Stir in peanut butter chips. Spread into the prepared pan. Drop marshmallow cream by spoonful on top of brownies. Take a butter knife and swirl the marshmallow into the brownies. Bake for 35-40 minutes or until lightly browned. Carmel-Pecan Chocolate Brownies

Yesterday marked the 4 year anniversary of me and my boyfriend being together, and they have been a wonderful four years. To celebrate I wanted to make him something special. First, I made him his favorite meal, which is tacos. He loves when I make tacos, so he was very happy when I made them for him. For dessert I wanted to make something chocolaty so I tried a new brownie recipe. I found this one on Bettycrocker.com and it came out really yummy. I did make one mistake while making it, I forgot to add chocolate chips to the brownie batter, but that is nothing the good thing is they still came out good and my boyfriend loved them.
Caramel-Pecan Chocolate Brownies

1 package brownie mix (and ingredients listed on box)
1/4 cup water
1/2 cup vegetable oil
2 eggs
1 cup milk chocolate chips
1/2 cup whipping (heavy) cream
20 caramels (from 14-oz bag), unwrapped
1egg, beaten
1 cup broken pecans


Heat oven to 350°F (if using dark or nonstick pan, heat oven to 325°). Grease bottom and side of 10-inch springform pan with shortening or cooking spray. In medium bowl, prepare brownies according to package. Stir in chocolate chips. Spread in pan.
Bake according to package directions or until a toothpick inserted near center comes out clean. Cool completely, about 1 hour.
Meanwhile, in 1-quart saucepan, heat 1/2 cup whipping cream and the caramels over medium heat, stirring frequently, until caramels are melted. Stir small amount of the hot mixture into beaten egg, then stir egg back into mixture in saucepan. Cook over medium heat 2 to 3 minutes, stirring constantly, until thickened. Stir in pecans. Spread over brownie. Refrigerate uncovered at least 3 hours until chilled.
Run metal spatula around side of pan to loosen dessert; remove side of pan. Transfer dessert on pan base to serving plate. Enjoy.

Rocky Road Brownies


I love brownies:) I would have to admit that they are one of my favorite deserts. Every time me and my friend Cynthia go out to eat we cant resist but share a brownie at the end of our meal. Well anyways my brownie creation came about a few years ago when I had an obsession with German chocolate. So I created a German chocolate brownie which became a hit (which I will share the recipe sometime in a future post). Since the success of that brownie I have been wanting to create another tasty brownie, but I did not know what I wanted to do. I finally decided that I wanted to make a rocky road brownie. The one thing that kept holding me back from making them was I did not know how I was going to get the toppings to stay on top of the brownies. I came up with the idea of pouring a chocolate ganache on top so it would hold the toppings in place. In the end the brownies came out tasting amazing. I would recommend drinking a nice glass of milk because these brownies are rich. Enjoy :)
Now either you can use a brownie mix or your favorite brownie recipe. If you don't have either I will include the brownie recipe that I have been using for years below.
Brownies
¾ cup all-purpose flour
¼ teaspoon baking soda
¾ cup sugar
1/3 cup butter
2 tablespoons water
1 cup semi sweet chocolate chips
1 teaspoon vanilla extract
2 eggs

Ganache
¾ cup heavy cream
1 cup semi-sweet chocolate chips

Topping
1 cup mini marshmallows
½ cup semi-sweet chocolate chips
½ cup chopped almonds

Brownies: Preheat the oven to 325ºF. Grease a 9-inch square baking pan. In a small bowl ix together the flour and baking soda; set aside. In a small saucepan combine the sugar, butter, and water. Bring to a boil over a medium high heat; remove immediately from heat. Stir in the chocolate chips and vanilla until chocolate is melted and the mixture is smooth. Transfer mixture to a bowl and cool completely. Stir in 1 egg at a time, beating well after each addition. Gradually stir in flour mixture until smooth. Pour into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. While the brownies are baking prepare the ganache.

Ganache: Bring the heavy cream to a boil in a small saucepan. Remove from heat and add the semi-sweet chocolate chips. Stir until most of chocolate is melted. Cover and let stand for about 10 minutes. Then gently stir until chocolate is smooth. As the ganache is cooling prepare the topping.

Topping: Mix together the marshmallows, chocolate chips, and chopped almonds. Set aside.

When Brownies are done let cool. Pour the chocolate ganache on top, reserving a small amount for drizzling. Pour the topping mixture on top of the ganache. Drizzle the leftover ganache on top. Let the chocolate set and then enjoy. :)

Failed Brownie Bites

Not everything always comes out perfect in the kitchen. Therefore I decided that it would be fun if I shared the things that I made that did not turn out so well. This would be my failed attempt at making brownie bites. I have been wanting to make these for a few days now, unfortunately they didn't come out the way I expected. The problem is that I didn't grease the pan enough and I filled each section with to much batter, causing them to cook over their ledge, making them difficult to cut out of the pan. The good thing is this is not a total fail because they still taste good,it is just that they do not look to presentable. So at least they don't have to go in the trash because somebody will eat them, if they can get them out of the pan :)
